Born in Villa D’Almè in 1880, Gamba Edoardo has always been a family-run business specialized in
the production of meats and salumi typical of the Bergamascan and Lombard tradition. In 2001 many
of our products gained the prestigious “Città dei Mille Sapori” certification and in 2009 we have
introduced a line of Organic products for which we acquire the best raw materials directly from
organic farms in Lombardy and the Bergamo area, we adopt the “short supply chain” philosophy
which allows us to provide our customers with highly specialized quality products.
Our range of products (both organic and conventional) encompasses typical Italian salumi (salami,
lard, pancetta, coppa, etc.), some of the most old-fashioned salumi recipes (slinzeghe, strolghino)
and our own cutting-edge experimentations (game, donkey, horse, deer and mutton salumi). All our
products are presently available both on the Italian and on the foreign market.
Our experience and expertise, passed down from one generation to the next, allows us to obtain
healthy and easily-digestible salumi which always retain a genuine, authentic and old-fashioned taste.
Our master butchers and charcutiers strictly follow the tradition and the artisan spirit in the crafting
of high-quality products. There are many elements that contribute to the creation of the finest salume
and they can be found at each stage of the food production: selection of the best raw materials,
preparation of the meat, curing process, use of spices, drying and maturing process, storage and
packaging of the goods.
The difference is then made by time and natural elements that give our meats all the necessary
quality to distinguish themselves among the other products on the market. Our salumi are given all
the necessary time to mature adequately and without any forcing. And that is why each salume Gamba
retains the taste of the Bergamascan land. To this we add close attention and constant improvements
in the production techniques and a successful merge between the Bergamascan culture and artisan
tradition and a continual and devoted interest for the environment and product innovation.
The quality of the Gamba brand, a synonym of taste and healthiness, has been obtaining for many
years several prizes and certification both by businesses and economic operators and by the general
public. The latest one, in 2014, is the mention of Gamba (especially for organic beef slinzega, organic
pork slinzega and organic spicy salsiccia) in the Guida dei Grandi Salumi (Guide to the Greatest Salumi),
at the first places in the list for the 29 finest Italian brands, published by Gambero Rosso
